Why Cream-Fried Eggs?

Frying eggs in heavy cream might sound indulgent, but it’s also incredibly easy (and worth it)! As the cream heats up, it bubbles and reduces, browning and caramelizing around the edges. The result? Eggs with lacy, golden bottoms, soft centers, and rich, toasted flavor.

Ingredients

Instructions

1. Heat the Cream

Pour a generous splash of heavy cream into a nonstick skillet or well-seasoned cast-iron pan. You want enough to thinly coat the bottom, about ¼ to ⅓ cup depending on your pan size.

Set the pan over medium-low heat and let the cream begin to bubble gently. This is key: you want slow, even cooking to let the cream reduce and brown without burning.

 

2. Crack in the Eggs

Once the cream is bubbling (not boiling), gently crack your eggs into the pan. Don’t move them around, just let them settle in and start cooking undisturbed.

 

3. Let Them Crisp & Caramelize

As the eggs cook, the cream will thicken and start to form a golden crust around the edges. Let the eggs cook slowly until the whites are set and the yolks are cooked to your liking. This usually takes 5–7 minutes, depending on your heat level.

If needed, you can spoon a little of the hot cream over the top to help the whites set without flipping the eggs.

 

4. Season & Serve

Sprinkle with salt and freshly cracked pepper, then slide the eggs out onto a plate. You’ll see crisp, nutty brown edges and soft, silky centers. Pure perfection!
